Cauliflowers have become increasingly popular and I’m very glad they have as it’s such a versatile vegetable. You can use it in curries, to make sauces, grain-free rice, pan-fried sides, crispy roasted and baked.
This is a simple recipe for a Cajun spiced cauliflower steak:
Making the marinade:
- X2 tablespoons ground mixed cajun spice
- X 1 teaspoon ground turmeric
- X2 teaspoon smoked paprika
- X4 crushed or thinly diced garlic cloves
- Juice of half a lemon
- 1 teaspoon salt
- X3 to 4 tablespoons of extra virgin olive oil
Mix all the ingredients in a bowl (the above ingredients should be enough for x2 steaks/ 1 cauliflower)
- Cut one medium size cauliflower in half and massage marinade all over it (covering all the nooks and crannies, add more seasoning if needed). Rest for a few hours or overnight
- Wrap cauliflower steak in foil or baking paper and put in a baking tray into a pre-heated oven on gas mark 6 for approximately 40 minutes
- Once cauliflower has been cooked remove the foil partially and put back into the oven on gas mark 4 for another 10-15 minutes until the outer layer is a little brown
- Serve hot with either a grainy side or more veg (the cauliflower is soft so use a spatula to grab the bottom when removing from tray otherwise may break apart).
