Prawn & Pineapple stir-fry (Udang Tumis Nanas)

Ingredients:

  • Sliced 250g pineapple (sliced chinks)
  • 250g medium size prawns (you can choose to peel off shells)
  • 2 tbsp cooking oil
  • 1 Medium sized onion finely chopped or 3 shallots
  • 3 cloves of garlic (thinly sliced and crushed)
  • Ginger (sliced and crushed, 2 cm) Galangal (optional)
  • 1 spring onion
  • 2 red birds eye chillies (diagonally sliced)
  • ½ teaspoon ground pepper
  • 2 tablespoons of sweet soy sauce (kecap manis)
  • ¼ tsp salt

Instructions:

  1. Heat oil, sauté onion, salt, garlic, ginger
  2. Add prawns, stir well into paste until pink
  3. Add the pineapple chunks (stir well and add a little water to prevent drying out).
  4. Add spring onions and stir well
  5. Add ground black pepper and soy sauce
  6. Finally add the chillies and stir until prawns cooked (add a little water if need to)
