Ingredients:
- Sliced 250g pineapple (sliced chinks)
- 250g medium size prawns (you can choose to peel off shells)
- 2 tbsp cooking oil
- 1 Medium sized onion finely chopped or 3 shallots
- 3 cloves of garlic (thinly sliced and crushed)
- Ginger (sliced and crushed, 2 cm) Galangal (optional)
- 1 spring onion
- 2 red birds eye chillies (diagonally sliced)
- ½ teaspoon ground pepper
- 2 tablespoons of sweet soy sauce (kecap manis)
- ¼ tsp salt
Instructions:
- Heat oil, sauté onion, salt, garlic, ginger
- Add prawns, stir well into paste until pink
- Add the pineapple chunks (stir well and add a little water to prevent drying out).
- Add spring onions and stir well
- Add ground black pepper and soy sauce
- Finally add the chillies and stir until prawns cooked (add a little water if need to)
